Vegetable Grilled Tacos with Red Cheddar
- | Large whole wheat taco bread |
200g | of red cheddar, sliced or grated |
1 | zucchini, diced |
1 | red bell pepper, sliced into strips |
1 | red onion, thinly sliced |
- | Olive oil |
- | Cumin, paprika |
- | Salt and pepper to taste |
Cooking the Ingredients

Season the vegetables with cumin, paprika, salt, and pepper, then drizzle them with olive oil.

Grill the vegetables until they are tender and slightly caramelized.

In a separate pan, lightly grill the red cheddar slices until they start to melt and turn golden on the edges.
Preparing the Tacos

Heat the large whole wheat taco breads in a dry pan or on a grill.

Place a portion of grilled vegetables and some melted cheddar on the taco breads.

Roll the taco breads tightly to form rolls.
