Vegetable Grilled Tacos with Red Cheddar

- Large whole wheat taco bread
200g of red cheddar, sliced or grated
1 zucchini, diced
1 red bell pepper, sliced into strips
1 red onion, thinly sliced
- Olive oil
- Cumin, paprika
- Salt and pepper to taste

 

Cooking the Ingredients

Season the vegetables with cumin, paprika, salt, and pepper, then drizzle them with olive oil.

Grill the vegetables until they are tender and slightly caramelized.

In a separate pan, lightly grill the red cheddar slices until they start to melt and turn golden on the edges.
Preparing the Tacos

Heat the large whole wheat taco breads in a dry pan or on a grill.

Place a portion of grilled vegetables and some melted cheddar on the taco breads.

Roll the taco breads tightly to form rolls.

Cut each roll into smaller pieces to form tacos.
